  Ingredients:
  • 6 eggs, 
  • 8 table-spoons of sugar,
  • 500 hectograms of mascarpone (italian sweet soft cheese),(17oz)
  • coffee, 
  • savoy biscuit, 
  • vanilla, 
  • dust bitter of cocoa . 
Procedure

Whip the eggs with sugar they become very fluffy, put the mascarpone in another bowle , take out the fridge one hour before to starting, soften it with a few of whipped eggs, don't stir as usual but mix with a movement from the bottom to the surface of the pastry with a woody-spoon, then add the remainder of whipped eggs. Put a layer of savoy soak with sugared coffee in a square tin-pan , put on a layer of mascarpone-cream, continue with a second layer of savoy soak with coffee put another layer of mascarpone-cream, sprinkle with cocoa and put the pudding in the freezer for one hour then serve it.
